  • 200 g dry dense dark rye bread, processed into coarse crumbs
  • 80 g brown sugar
  • 1 teaspoon ground cinnamon
  • 500 ml whipping cream, well chilled
  • 40 g sugar for the cream, or to taste
  • 300 g tart cranberry or lingonberry preserve
  • Fresh berries or grated dark chocolate, for decoration (optional)

Method

  1. Prepare the crumbs

    Dry the dark rye bread completely and process or grate it into coarse crumbs.

  2. Toast the rye

    Toast the crumbs gently in a dry frying pan with the brown sugar and cinnamon, stirring continuously so the bread and sugar do not burn. Cool completely.

  3. Whip the cream

    Whip the chilled cream with the sugar until it holds soft to medium peaks.

  4. Build the layers

    Layer rye crumbs, berry preserve and whipped cream in individual glasses or a serving bowl. Repeat the layers and finish with cream or crumbs.

  5. Chill

    Cover and refrigerate for at least 4 hours so the flavours combine and some of the rye crumbs soften.

  6. Finish and serve

    Decorate with fresh berries or a little grated dark chocolate if desired and serve cold.

Storage

Keep refrigerated and serve within 2 days. The texture becomes softer with time.
